White Labs Bavarian Weizen (WLP351) is a liquid wheat yeast with a low flocculation rate and a medium alcohol tolerance. It is ideal for fermenting wheat beer styles and has an attenuation of 75%. This strain of yeast produces full-bodied beers with subtle ester flavors that can range from banana to clove. The optimal fermentation temperature is 19.0-21.0 °C and the typical beer styles brewed with this strain are Weissbiers, Dunkelweizens, Hefeweizens, Kristalweizens, Gose and Berliner Weisse beers.
