It has a high attenuation of 77.5%, a medium-high flocculation, and an excellent alcohol tolerance of up to 12%. The optimal fermentation temperature range for this strain is 19.0-22.0 °C. This yeast produces complex esters and phenolics that are characteristic of the classic Belgian ales, with flavors of spices, fruit, and clove in the finish. It can be used to craft Trappist ales, Belgian dubbels, tripels, and quads as well as strong golden ales and saisons.
