Wyeast's Belgian Saison (3724) is a liquid ale yeast that produces a beer with excellent attenuation of 78.0%. It has low flocculation and an alcohol tolerance of 12.0%. This yeast ferments best at temperatures between 21.0 and 35.0°C. The flavor profile of this yeast is complex with notes of spice, pepper, and fruit esters. It is particularly well-suited to producing the classic Belgian saison style, as well as other farmhouse-style ales such as witbiers and bière de garde. Other styles it can be used to produce include pale ales, amber ales, IPAs, and porters.
